The revenge of the carrot

Twenty years since the core is the most dreaded vegetable diabetics. Why? The glycemic index of cooked carrots is similar to that of sugar ... It was true! LaNutrition.fr you finally told the truth about this vegetable. Rehabilitate the cooked carrots!

It is time to restore the truth about carrots, vegetable banned diet of diabetics, because they showed that in 1981, when cooked, a glycemic index of 92, which is very high.
For over twenty years, the cooked carrot has been in the ugly duckling of the vegetable kingdom: "All vegetables are low GI except carrots cooked to be eaten sparingly" could be read in advice to diabetics.
This value of 92 for GI of carrots cooked from the first studies conducted in 1981 on the glycemic index. Only 5 people had participated and the results were very mixed. In reality, the glycemic index of the core is low: it is equal to 16 when it is raw and 47 when it is cooked. This means it does not increase strongly and quickly blood sugar and can be safely consumed by diabetics. These new values of the GI of carrots were published in 2002 by the team of Jenny Brand-Miller and are much more reliable.
